One thing I LOVE about Rwanda is how abundant and CHEAP fresh, beautiful produce can be! I consider myself somewhat of a health nut, so the opportunity to use so much fresh produce is a huge treat for me.

I’m all about making things easy, so I like to make a BIG batch of something at the beginning of the week to last us a few days of lunches (or, lets be honest, dinner on a night I don’t have time to cook). Sometimes this is a big pot of soup, or maybe a veggie-centered pasta salad. But often, it’s this recipe!

Basically beans, avocados, and veggies, this salad goes by Cowboy Caviar in the USA and is honestly a delicious, balanced meal in itself! You can eat it as a dip with chips, with a spoon on it’s own, in a chapati as a wrap, or over a bed of greens to make a salad. It’s versatile and nutritious- full of healthy fats and protein.

I’ve tweaked the recipe a bit to make it perfect for life here in Kigali. The splurge is the can of sweet corn- don’t skip it. Promise me. It’s the best part!

KIGALI CAVIAR
2 cups cooked beans
2 avocados, diced
One can of sweet corn, drained
4 tomatoes, chopped
1 bell pepper, diced finely (more if you’d like- this is pretty with different colors)
1 small onion, diced finely

Mix everything together. Season to taste with salt and pepper. Bam. You’re done!

I highly encourage you to tweak the amounts in this to your liking. You may want a higher bean ratio, or more avocado- you do you! Also- this is a super easy recipe to teach a housekeeper and have on hand all the time. You’re welcome! 😉
